Ucayali River Cacao is a central fermenter that works with cocoa farmers along the Ucayali River outside of the Peruvian city of Pucallpa. The Cacao Beans exhibit a wonderful aroma in the fermented state and provide an indication of how the chocolate will eventually taste. We find it exhilarating to open up a new burlap bag.
We taste cherry notes that and creamy yogurt. The 8 day turn-around time to make Peruvian chocolate is always fun.. all those intermediate taste testing.. and viola, the final product...
And as always, we hand-make and wrap each bar.
Our chocolate is hand made in small special batches and curated to the highest standards... and we are over the MOON.
